Quasi tutti i programmi ti permettono di gestione pacchetti. Synaptic, ha la ricerca da gui. Ma anche con apt:
apt search opencv
Eventualmente puoi installare apt-xapian-index, che un po' piu' sofisticato di apt search.

Per evitare l'upgrade di un pacchetto puoi mettero in hold:
apt-mark hold <pacchetto>
Tieni conto che alla lunga questo potra' crearti qualche problema, soprattutto se sei in testing, perche' di solito nuove versioni di altri pacchetti potrebbero richiedere l'aggiornamento del pacchetto che hai messo in hold, e anche quelli non vengono piu' aggiornati.
